How to pin/unpin materials in right panel menu?

...You can't pin mats.

I have some of them pinned and I don't know why. I have option to browse them by pinned.

Mats are shown as pinned when they are required for pinned blueprints. Go pin / unpin blueprints at engineers.

Those mats are automatically pinned because they are required for one of the blueprints you have pinned.
