I would love more plants to play with, especially the small and middle sized plants for garden layering. Hydrangeas of varying size/shape, roses of different kinds/sizes/shapes, lavender, daisies, different size sunflowers from small to huge, oleanders of different size and shape. Or others, I'm not picky, just want more! Silver sage (Texas sage) blooming and non-blooming. More generic but lush bushes of different shapes and sizes. A few styles of box hedges that aren't clipped but growing wild. A few different maple trees of varying color, and different kinds of oak would be nice, too (like a red oak both in green and red).

Crepe Myrtles
And crepe myrtles! I can't believe I forgot to mention crepe myrtles. Varying sizes and shapes, from small bushes to little trees, with configurable color.
And I agree, that red bush is tiresome!

But personally, I'm waiting for the possibility to import own created content (as far as we will ever get this feature!). I prefer to create own plants, 'cause the in-game plants looks too cartoonish. The colours of the leaves are too gaudy. Just my opinion.

LOVE THIS GAME - and GRASS would be lovely; to add that derelict area under you coaster footprint -
Phaphidophora aureu = Pothos - would be a lovely creeper to climb up the palms . . . Would add yellow colour and variety to the game.
Fatsia japonica - for variation on leaf shape and plant structure;
Colourful Cordylines to add more structure and changeable leaf colour. Leaf litter and broken logs and debris would look great in Spooky areas.
BOABS - and BAOBABS - for trunk variety and savanna effect.
