In current version of game, turrets do lag behind target if it's faster than ship carrying turrets. But that really doesn't work well in-game. In-game you can sit in ship keeping your nose on enemy, and but your turrets just won't hit him, lagging few dozen meters behind him, simply because his speed is bigger than yours. IRL your turrets won't hit it if it it's relative speed vs your speed and vector is bigger, and turrets can turn fast enough to keep track on it.
Just on example:
IN-GAME:
You both fly in straight line in same direction, distance between you both , he is faster, you slower. In that case turrets just won't hit target shooting somewhere 10m behind him, simulating not being fast enough to track faster target (although in reality it would easily hit it.).
IRL:
You both fly in straight line in same direction, distance between you both , he is faster, you slower. In that case turrets hit target easily, because his speed is big, but relatively to your ship, his speed is slow, so turrets won't have problem tracking it and hitting it.
