There's Oolite, which is a GPL remake of Elite
JJFFE should, I think, still work, if you can find it
Other than that I think it'll mainly be using various emulators and roms

A Brief History and Guide to the Previous Elite Games includes some discussion about playing the old games on modern hardware
There's also Pioneer which is based off Frontier (though I think they're moving beyond that now).
