How dose the storage work for crafting will I need cargo racks on the ship? How much can the srv carry? Do multiple srvs in the hanger stack crafting materials in each srv? Sorry for all the questions as I can't find much info about this anywhere.

No. The materials you will find on a planet's surface, will be stored in a special loot bag. This loot bag is carried by your pilot, so you can swap ships & still have the materials.
This is how it works in 2.0. There may be changes coming in 2.1, but all I've heard is that the bag is being made bigger.
However, some 2.1 loot will need to be carried in cargo racks, and you'll know when, as that loot will still be a cargo canister. Fortunately, that loot looks like it'll be needed in far smaller numbers than other loot.

The first SRV I find I WILL attempt to pancake it with a T9, Conda, Cutter, etc. I will then record it for the lulz.

I'm sure the SRV cargo bay takes up an existing size 2 module slot... the hoofed one will keep you right on that one
They come as Class 2, 4 & 6. The orbital approach suite (You will need this for landing on planets) has it's own slot and said slot is added to every ship automatically though you still need to buy and equip the module yourself.
When the srv is stored in the ship will the ship refuel the srv or the only way to refill it is crafting?

It uses a different fuel compound to the hydrogen that ships use, so yes, you'll have to refuel through crafting. Or at a station. Whichever comes first.
One sulphur & one phosphorous for a basic refuel, if memory serves.
