Really struggling with NW and SW on Jurassic difficulty

For NW I’m having trouble starting and getting over that 2.5 star threshold for feeders.

For SW I always get really close to 5 stars, but then my dinosaurs start dying and my income lowers so much that it’s impossible to replace them all.
 
For NW:

Your favorite dinosaur to get out of the early game is the Metriacanthosaurus. Build a large paddock and cram as many as you can in there and provide amenities. Provide a tour as well for the adventure guests and a hotel. They might get destroyed, worth it.

Even if you have to sell of this part or divide the paddock in two later on. Your goal is 2.5.

You Should be at 2.5 by this point. I'm assuming you've got a few dilos, ceratosaurs and maybe a few Carnotaurus.

I also highly highly highly recommend you focus a bit on fencing. The less time you spend running around your park chasing escaped Dinos after a storm, the more time you can spend making money.

For SW:

I encountered the same problem. The best way I found to avoid it is to have 3 enclosures with a variety of herbivores built while reaching that point. The issue you encountered is the challenge of that map. You'll get more value out of your big carnivores if you can lessen the impact of the variety penalty. Don't try to remove it. You won't.

Also. Preplan you amenities because space is at a premium. On a few runs of that map, the biggest hold back I encountered was amenities overcrowding, which is lost income - and lost rating. In fact, I had 120% of the appeal goal, but still only 4.5 stars for this reason.
