Red Super Giant Betelgeuse.

The star is near dying and expelling gas and dust until it start making iron and goes boom.
Since Elite happens in the 3000 and Betelgeuse is still around, it means it is still fluctuating and releasing gas.
I have no idea if Frontier will have Betelgeuse go Super Nova as part of an event or not, but I think the effort should be made to make it look as we currently knows it looks like.

If Betelgeuse goes up that would be a major event indeed.

Given that it's about 600 LY away it may already have done so and we just haven't seen it go up yet, but what I'd be interested in from an Elite viewpoint is how Frontier would approach the effects on nearby star systems over the following years as the radiation bursts forth...

Currently we have 100,000 years before even the possibility of it going nova so plenty of time in ED universe, however even so we don't really have any close up images of Betelgeuse to compare with our in game images.

This is the best we have from hubble;

Making it look like an artists impression is just as likely to get the wrong look anyway.

Don't get me wrong though, I would love things to be more "entertaining" in space, for instance those solar prominences I fly through all the time while fuel scooping should have a considerable effect on a ship flying at a fair fraction of the speed of light, I just don't think replacing one wrong idea with another is worth it. I would certainly make visiting stars like Betelgeuse a lot more dangerous, but nothing a good skipper couldn't handle with a bit of caution and preparation. Going to places like Betelgeuse should be fun and interesting, not just another star.

Take your time to watch the video.
It is a bit long, but entertaining on its own. And they do mention the pic you just linked.

The three stars remind me of the location of the pyramids and also the vulcans on March;)

The bigger star, it dies faster, even a red star lives much longer but the problem of a red star has very agressive sun winds [alien]

Betegeulse is a rather emblematic star in the sky, I assume is one of the reasons why FD simply added it instead of putting a nebula in its place. Obviously no one can tell when the star will go off, we do not know if it already went off and the neutrinos havent reached us yet. It could be that it went off and we will know in 600 something years.

And while the game happens 1000 years in the future, Elite uses the star chart as we know it now. Therefore is not absurd to think that we could simply have Betegeulse as we kind of know it looks like now. In any case, this is a suggestion to make things more saucy looking in space, it is already awe inspiring when you reach Betegeulse and you are scooping it hundred of light seconds away from it. There is also a tiny planet inside the scoopable area of the star, that should be nothing but lava, but you can land there, is nice. Imagine how it will look amidst dust and gas plus the huge convection heat blobs.

There is no crime is asking, right?
