I played this along time ago now and some during beta and have come back after several years. Obviously I've forgotten how to fly, disappointed that I had to delete my old saved game to access flight training tutorial again, alarmed to find that the tutorial doesn't even tell you how to actually take off, I've scrolled down to Auto Launch and then sat there for 20 mins trying to figure out to actually make it move...I suppose now I have to search through videos on Youtube or forum stuff, just to find the basic control information.

Maybe a bit late, but you didn't - they're all available from the right panel
I didn’t have to delete mine but I chose to as the game had changed completely in the 5 years I was away.
A HUGE +1 for EDRefCard as well... I had to re-do all my bindings and still tweaking.

So what is the default key to actually take off? Because I can't find it, what's it called,where is it in the keybind list?
To launch you select "Launch" (or "Auto Launch" if you have an advanced docking computer fitted) - so use W and S to move the selection up and down and space bar to select / action it.
If not using Advanced Docking Computer then to raise up from the pad you use your UP thruster - default is "R" key. (See page 43 of the manual for "manoeuvre" keys.)
When launching from a planet surface, just use the UP thrusters (R key) which will spool-up the engines and raise you straight up.
