Returning after a long break

Have they added anything new to exploring? Its been about 6 months or so since I've played. I know about the system map changes. I'm content in just scanning and exploring but wondering if I should be on the look out for anything :)

Sure, keep an eye out for "mysterious things". (FD's favourite phrase in patch notes)
Also, the Pleiades have a lot of Thargoids now, but nobody has spotted them elsewhere. Should you actually encounter one anywhere else, do post it.
 
You can plot up to 20,000ly now, and you don't get dropped into stars anymore.

Come back in another 6 months and hopefully there will be more to report [haha]

Sure you do. I dropped out inside a star a couple of weeks ago.
But the game does try to prevent that sometimes now by dropping you 100ls away from close binary pairs. First time that happened to me I though I'd dropped out in front of a black hole but there was nothing near me.
Too far away to scoop without wasting time so if I'm not staying to scan anything, I just skip a scoop and jump out.

There are new synthesis recipes now. You can synth heat sink reloads. You can synth reload for your emergency life support meaning you can stay alive longer, maybe indefinitely if you have a canopy breach.
You can synth limpets so you don't have to carry the weight and there's a hull repair limpet controller that can repair your hull on long trips.

There was some news recently about significant improvements coming in the next patch.
