I have 30 or so ships in storage and a pile of overpaid NPC's lounging around taking a major percentage of my income while I do all the work.

Why can I not give one of my unused cargo ships to one of those lazy so-and-so's and have them fly with me in our own personal wing for colonization cargo runs that matter? Yes, I'll have to pull them out of the odd piracy scrap, but then its an adventure. Shuttling back and forth endlessly isn't very engaging.

I would love to see some escort missions in the game. I believe any space simulation game has these...not sure why ED does not.

Then hell yes, using NPC crews to fly while you escort would be awesome.

Make them painfully slow, increase the chance of the convoy getting interdicted and mandatory to fend off the attackers otherwise risk of losing it all, and make it mandatory to pay the pilots a hefty fee or/and percentage of the profit (if any) to limit how profitable it would be for trading.

Go from A to B, painfully slowly, without fuel scooping, is already implemented and used by the Apex service.
They would just need to fly in a wing, like NPCs do, and you would be in charge of following them (with the existing nav-lock function compatible with your NPC wing) to protect them.

Apex aren’t our crew. The pilots we hire for SLFs definitely exaggerate on their CVs!

Oh yes, it was a "harmless" one, and oh boy, have I regretted this decision. But after all, he handled it just as well as any human newb might :D . Those pilot license tests sure have a low standard.

I almost lost my near indestructible ‘Vette after leaving it in the “capable” hands of my Elite pilot. Never again! 😆
