if you want the capture mode on PC it's C on consoles I think you have to open it in the pause menu?
there is also a button for takin a picture

If you're using an Nvidia card, you can use Alt+F2. Ansel is supported in this game and will take your screenshots to the next level.

Depends on what you're using.

If you're using Ansel it goes to My Videos/Jurassic World Evolution 2

.../steam/userdata/... or in the overlay from steam there you have a button to open the folder.
consoles: no idea
