So I see we can buy paint jobs for our ships. I have no intention of ever doing that as I make it a habit to boycott in-game stores, but it got me to wondering: how do I see my ship in-game? While playing all I ever see is my cockpit window and flight controls. So if someone were to buy paint for their ship how would they enjoy it by seeing it?

You use the debug camera! Can't remember the controls but it's in there.
I'm not certain it is bound to a key by default, but you should be able to find it in the keybindings. Try binding it to where jettison cargo is, you can kill two birds with one stone.

So I remapped the jettison cargo to be the same key except I have to also hold down the ctrl key. Should make it very hard to accidentally dump cargo. And made the debug cam the old jettison key.
So the debug cam seems to operate like an invisible ship flying around my actual ship. At least, it seems to make use of the same maneuvering controls. Is that right? It's a bit odd, but par for the course in this game as I've learned.

Right, it uses the same controls as your ship. And F10 for screenshots.
It's more for taking Galactic Holiday snaps than for in game functionality as far as I can fathom

I thought about getting a paint job, but ultimately decided against it for right now. Fortunately, though, the NPCs are not as stingy, or they get a massive discount
, I do enjoy seeing them with cool paint jobs.
