Destroy a Thargoid Sensors (and I believe Probes) and you will get a few sensor fragments to collect.

Right now you can usually find them around the Thargoid Alert systems in the bubble. Look for Non-Human Signal Sources 4 or 5. But be warned there may be scouts already present and/or interceptors that jump in so be prepared to take a beating.

Cannon has other suggestions of where you may be able to find them in Merope.

May have better luck in Merope. Anywhere there's a Thargoid Alert there seems to be around 15-20 fleet carriers and already players there trying to nip the Thargoid prelude to invasion in the bud. Naturally, that causes help to be called for so you now have dozens of thargoids flying all over the place in zones where the probes were supposed to be.

It's hell out there.
 
Do some research and find a crashed scout. Go there with an SRV. There will be Thargoid Sensors scattered around the crash site. Shoot the Sensors with your SRV. Sensors then each break into (2? I think) sensor fragments. Scoop them up. Re-log,if that’s your grind, and repeat.


***Sorry I should have said Thargoid Sensors, not Thargoid Probes!

Thargoid Scavengers also drop them, among other xeno materials that may or may not be useful in the future. You'll find them at any Unknown (Thargoid) Surface Structure
This is absolutely the way to go. Go to a Thargoid structure, wreck scavengers, pick up parts. The scavengers respawn, so hang out and do your xenocide so that you can go fast.

To confirm, those fragments are also going to cause caustic damage, right? Or do they become "materials"?
 
Yes the sensor fragments are safe. As stated they are materials. The Thargoid Sensors (and other Thargoid “cargo” items you may find at these sites) are corrosive if you pick them up. But for the purposes of the question that was asked, there’s no need to pick them up. However if you want those cargo items as well, you should unlock and install a size 4 Corrosion Resistant Cargo Rack; this will make it completely safe to transport them in your ship. *I’m not sure if they will cause damage if you transfer these cargo items to a FC. But in the old days, when we didn’t know what Thargoid Sensors really were (and they were called Unknown Artifacts) they would cause damage when they were sold to stations. If enough of them were sold to a station, the station services would begin shutting down. This was called “UA Bombing” a station. It could be reversed by delivering Meta Alloys to a bombed station. This entire mechanic has been removed from the game because of malicious use by players.

High gravity moon....

I discovered it during my last long term exploration session...

It's surface is littered with Thargoid Sensor fragments....

Everytime I've been there it's had at least half a dozen Non Human Signal Sources scattered all over it's surface... each one with 2-3 busted Probes with Fragments scattered about.

Do the Thargoids reach this far beyond human space towards the centre?

Fastest way, go grab a sensor or probe, go to thargoid structure, destroy the thargoid links inside the structure. Each one drops two items (total six sensor fragments)... given there's 9-12 links per base that's 54-72 fragments per structure.
 
Do the Thargoids reach this far beyond human space towards the centre?
For one thing, they have been around since before a hipbone was the pinnacle of weapons technology. For another, they may not perceive Einstein space the same way as we do - aside from their familiarity with withspace, the movement and visibility of their Maelstroms/Rogue signal sources indicates that lightspeed may not apply to them.
