Shields offline! Hull integrity critical! Eject, eject, eject! *Boom*

Well, that wasn't quite realistic for running out of oxygen. I don't get why the ship explodes when oxygen reserves are gone. Should just fade to black, perhaps with blurring of visuals and sound muffling?

Agreed in part. Were it realistic though, you'd run out of O2 and die, lose all your ships and have to start over with a new CMDR. At least if your ship is detecting your lack of consciousness and ejecting you in hopes your pod can be recovered before you die, then the way it works makes sense ... somewhat.

For some reason, I think that things like expanded life-support mechanics will arrive together with early first person gameplay (together with fleshing out things like g-effects, temperature's effect on the pilot and so on).

I think lore-wise there's an emergency backup for your suits emergency backup oxygen system, that basically puts the person into a coma.
So, in Ironman, for example, you could find yourself without oxygen, fade to black, and then you wake up staring into the face at the doctor on the local starport, or noone finds you because you lost oxygen far away from civilization, and then you just die.
Or, you wake up, only to be forced to watch a cut scene where the black salvagers who found your ship wreck sell you into slavery and then RIP Commander. That would be brutal :D

For normal mode, I think you could just be ''rescued'' and returned to the last station you visited.
