what does the term skin mean? I've seen ride skin, shop skins and I have no idea what it means

It's custom theming around a standard ride/shop, to make it look different. A new 'skin' literally....

No, only if the structure is specifically meant to alter the look of a ride. It's not odd, it's just a phrase to make something clear.
It's just a term to inform that a ride is transformed into something different.

Then you have just a building and scenery. No skin in my opinion. A Skin is to cover existence theming by Frontier with something different. A shop is just a bare element without theming.
