Fundamentally, though, it's just about tying up your existing assets and then leaving yourself with whatever you want to "start again".
A while back I took my starter sidey back to it's "home port" to leave it there.
Conveniently, I had
just over Cr3bn in the bank at the time so I decided to buy another sidey and see what I could do without allowing my bank balance to drop below Cr3bn again.
Was fun for a couple of weeks, running missions in the sidey, upgrading it to a Cobra and then an Asp etc.
Didn't take long before I'd earned a couple of hundred million credits again and that's when I just went back to playing normally.
Seems like the main "trick" to starting off at ED is understanding the benefits of becoming allied to factions and knowing what to do to maximise earnings and progress.
Alas, this is stuff that you can only learn once, which negates a lot of the obstacles to be overcome for a genuine newbie.
Properly resetting your save is a bit pointless IMO, and just becomes an exercise in "going through the motions" to get back to where you were.
For the purposes of a bit of fun with "early game" play, it's easier just to buy a sidey and
not spend any of the credits you already have.
