Since when do wars end after 2 days?

When you say "ended after 2 days" do you mean
- "it went pending, active, active, done and you saw it do that / have a good time series of 3rd-party reports with no missing days" (please give more details, that's genuinely new!)
- "it had a final score of 0-2 or 1-1 but I wasn't able to observe the lead-up to it" (that can happen if there are some drawn days - where the war is sufficiently obscure no-one does anything for either side on that day; it still was best of 7)

Also... which system, which factions, just to verify.

2-0. I wasn't around for the lead up, but I had two concurrent wars end with the exact same score.
If it ended at a score of 2-0, it means there were five three days that were a draw.
(three because the war ends when the result is impossible to change)

Navigation pane -> summary will tell you how many days any conflicts in the system have been running. As far as I know it's the only place in the game where this information is available (unless it's shown on the new faction status panes added to the system map, haven't looked at those much).
