Yes this has been known for some time, but no it shouldn't be reflected in E: D as they can't put realism above gameplay.
 
The sun does have the correct classification in game, it was probably some art guy that coloured it being used to our impression of it here on Earth. Most folks that see it will accept it as is, as that is what they are used to and expect.

The suns in game are all a lot darker than in reality for a reason. You can't even look into the sun from Earth. Now dropping out of hyperspace everytime close ot a star would make you get blind within less than 10 seconds, even with closed eyes. Don't think this should be "realistically" presented.
 
Surely it would make sense that the light from the Sun is dimmed and that the colours are more contrasted, sicne that is what happens to everything else we see through the canopy?

I suppose lore could be used to argue the variations in colour we see are due to the projected image within our cockpits. The various nebula visible in game should have little or no discernible colour at all, many images visible to the public are false colour to improve contrast between regions, and those that are not, reflect the colour accumulated on an image medium over a period of time. In truth our eyes are not sensitive enough to the light spectrum to perceive any colour from these objects, some folks claim to see faint blue or green tinges when viewing some of the brighter nebula through telescopes, but that is as much as we should really be able to see in game.

The cockpit window filters the light for us so we dont go blind or burned alive ;)

I always assume our windows are filtering the stars down to about 10% of their brightness.
No matter what colour they "are" they are still so bright all we would see is white.
Apparently our sun is actually slightly pitched more into the green-yellow of the spectrum but our atmosphere filters that down to red-orange.

It would be a hilarious game mechanic if when your window blows out the stars appear white hot where there is no glass blocking it. (and perhaps crisp up the pilot)
 
It would probably be cool if we could buy filter upgrades for the canopy and probably not even hard to implement.

Hmm I can try that out I have both a pair of Ray Bans and Oakleys. My led screen is pretty bright normaly down at 50% so it might be time the put the bins and hit full throttle and dive into Pistol Star.

how the bloody hell.. does the colour of the sun, affect gameplay, other than education?
if your thoughts are representative, then this is very bothersome to me.

101. the sun is white. our UV-shield turns it yellow. (ozone)

if E : D is to educate, which i believe is one of Frontier Developments intentions, then it should be white.

this is not opinion.
