If I am supercruising to, say, what I hope is an unexplored star in that system, my speed goes up to max and them starts dropping.

Why does it drop? Does it mean there's stuff out there exerting a gravitational pull (i.e. unexplored planets round the as yet unexplored star)?
 
Your speed picks up as you travel in SC mode, and then gradually starts dropping off when you're about a minute away from your destination.

It will also fluctuate as you skirt gravity wells (stars, planets, etc.) on your route, and you might even see the fairly useless "SLOW DOWN" message appearing as you do that.
 
The stars exert a bit of control on your max SC speed too. Even if you have no destination locked, you will still speed up or slow down a large amount within a decent range of a star or other body. The highest SC speed I have seen personally is around 1325C, I suspect that it would maintain that speed between systems if it is possible (within the game's structure) to travel between systems without using the hyperdrive.


I am extremely tempted to find a couple systems that are a LY or less apart and attempt to make the trip in SC, just to see if it can be done.

I'm pretty sure it has and that you're right. You can get to the next star but unless you fly in through hyperspace, there's no trigger for the game to load in the details of that star system - so there's not much to do once you get there.
