When Steam VR is open click on SteamVR (with version no.) in the top left and select show mirror.
This opens a new window called Headset Mirror showing view of both eyes. From there you can press 's' and it should launch a windows explorer session with a screenshot directory where a png image file will appear after a few seconds.
You can use the menu to change the view and screenshot individual eyes.
The directory on my system is:
C:\Program Files (x86)\Steam\steamapps\common\SteamVR\screenshots
I can't see an obvious way to change the screenshot directory, let me know if anyone figures it out.
