I'm ok with AI being hard and able to kill us, but the players should have a way to avoid it, and this way should be by travelling only on high security systems.
My suggestion is to add one option beside economic, that is secure which calculates the route to your destination by travelling through high security systems only if possible, so if you happen to be interdicted by NPC you have the help of the police to protect yourself.
