Is there someway to jump to a specific star? Some systems have really spread out stars and it takes several minutes of boring cruising just to get to the other star. I feel like I'm doing something wrong, or is it really supposed to take this long?

Space is big. Mind bogglingly big. (I'm too tired to quote properly from the Hitchhiker's Guide...!).
The trip itself might be dull, but there may be a payoff (good mining site, or gem of a station/outpost in the middle of nowhere). For instance I know a system with the stations on a secondary star around 46,000Ls from the arrival point. But once out near the stations there are some good in-system trades. Or, the journey is its own reward, to have that sense of being in deep space. But do make sure your throttle in supercruise is at max.
There's no reason to fully explore every system (unless you're an explorer) and I imagine some of these systems will become backwaters.
