I play in Open.
I'm kind of past a T6 as a main delivery mission ship, but not quite got the cash for a T7 yet. Defence of the T6 has always bugged me. Of course, there's the plain submit...boost...boost...jump. I've tried this while laying mines and have had varied success with both NPC and CMDR pilots.
I'm not one for maximising my cargo space. I'll equip the best shields I can, military grade composite, point defence, weapons and so on, so my current T6 build has about 70T rather than around 100T capacity.
I've never used turrets, so, are they a viable choice for defence when running away from interdictors or is just plain running away and ignoring weapons the best bet?
Or I'll just load up a Keelback when they're buffed in 2.2, or refit my AspX when I get back to civilization.
