Just figured this out, and wanted to share. Sorry if this is an old hat:
1) The hires screenshot (Alt+F10) is undistorted, but SOLO ONLY, and you need to hold your head still while it renders. For me at least the image in the right eye freezes while the hires screenshot is rendered, making it easy to tell when it is done. There are some other funky in-game artifacts as well while it is being rendered.
Example, scaled down from 4728x5844.

It's a bit hard to take good shots, though. Sometimes, like above, you by accident get something where the motion blur is apropos and adds to the dynamics of the image in a good way: most of the time the blur just looks bad. Which brings me to the next point.
2) If you edit $HOME\Appdata\Local\Frontier Developments\Elite Dangerous\Options\Graphics\Settings.xml you can change the hires scale and anti-aliasing level. For me scale 1 leads to broken images (Windows can't open them, Gimp can -- but even then they're black and white) but the following settings seem to work:
<HighResScreenCapAntiAlias>2</HighResScreenCapAntiAlias>
<HighResScreenCapScale>2</HighResScreenCapScale>
The hires screenshots render clearly faster like this, still look good, and even though you still need to hold your head still getting a nice one is much easier.
Example, scaled down from 2364x2922:

3) VoiceAttack command to actually take the picture, of course. Or even a timed series!
EDIT: bonus keywords for search: Oculus DK2
