It sure would be nice to be able to order a drink or better yet, a cocktail from the bartenders. Keep everything existing in the chat window, just add a non - trade selection.

Also, enable missions from them, e.g. hey commander, bring me some [rare bar commodities] /or / raid a ship being tracked with [rare bar commodities] / meet up with settlement npc and bring me the [rare bar commodities], uber deliver an order of [bar commodities] to tourist settlement, etc., etc.
Same thing from the Vista Genomics (for science and exploration mission) and Pioneer (who should offer missions for materials related to the upgrades available)
