The answer is go figure it out. This is what ED is all about as what works for me won't work for you as we don't play the game the same way. There is no best weapons load out without taking in so many other variables including your combat skills or lack of them. So I go to a system near Maia after running around the bubble transporting all the weapons many have used against the Thargoids.
Taking on every large Thargoid ship I found two large Plasma Chargers, two medium Gauss and a remote release flack launcher on a heavily hull tanked Krait Mk II with max engineering works well. Add in Trident and Lance fighters for distraction helps a lot trying do it solo. It is a lot easier with friends.
Scouts are different. I found that five overcharged auto load gimbal multi-cannons are slower than two large AX turreted multi-cannons, one large engineered multi-cannon and two medium plasma chargers. But if I was good enough two large plasma chargers, two medium gauss cannons and the flack launcher destroys every Thargoid. Then fighting Thargoids is a lot more complex versus the ship and weapons. The biggest challenge is avoiding caustic hull damage.
Many post on the Forum asking what is the best ship build. What they miss is that it is all about the pilot and not the ship that they fly. A specifically designed Imperial Courier can take out any NPC Elite anaconda or type-10 as well as upsetting a few live players in Open mode. It is all about the pilot and dialing in a specific purpose for a ship. Never expect that one ship build for another will work for you. You are missing figuring it out and enjoying the game. Looking for a fast solution misses the point of the game to enjoy figuring it out.
My advice. Make lots of credits. A LOT of credits. There are so many ways to make billions of credits. Then when one gets in harm's way with an expensive ship they won't have to worry about the rebuy and starting over with a sidewinder. They will have a lot of fun getting better at the game.
