Thanks to YouTuber BestInSlot, I can show you guys the complete list of dinos, both returning and newly introduced to the JWE series.
To start things off, Jurassic World Evolution 2 is said to launch with over 75 (or 75+) dino species, both dinosaur and non-dinosaur alike. And they're right! There is a total of 79 species at launch. Not including the 5 extra from the Deluxe edition pack. But add them together, that makes a grand total of 84 species in the entire game, and more to come post-launch without a doubt.
For those wondering what species from the first game are returning, here's your answer: Every single dinosaur (all real species and the two film hybrids) from the first game are returning to JWE2, but with 3 exceptions, and those are the 3 Secrets of Dr. Wu hybrids (Ankylodocus, Stegoceratops, and Spinoraptor). This means, of the 68 species JWE1 had, only 65 of them are returning. 64 in the launch game, and 1 in the deluxe pack.

I also want to bring up something interesting. A hunch I've had in recent months.
The returning dinos from JWE1, in JWE2, including those with their JP trilogy designs, despite the claims you may find online, do not, and I repeat, DO NOT have a single model change. And what I mean by "model change" I mean "changes in the 3D base model". For example: crest size, tail lengths, head shapes, etc. etc. (Although there are at least 1 or 2 exceptions that I'm not sure of.)
Something like these for example, from one of BIS's older videos:
The returning JWE1 dinos are in varying new sizes as well as postures (Some of them. Not all of them), and all of them have new "skin layers" which include colors, patterns, mappings, shadings, etc. etc., but no base model shape and size tweaks. The default Pteranodon, one can argue, was redesigned to represent the JW trilogy design. However, I know that since the JPIII Pteranodon (whether it's just the ambient pteras like in JWE1, or something you can have but not shown) is in the game, I doubt it and of itself has a model change.
What I'm not sure are exceptions, after further detail analysis, are the Rex's head and the "quilled" female JPIII raptor, the latter at least for launch, especially when you realize both JPIII male and female models are different from one another in JWE1. And the only way to know conclusively for the former is to compare it and the JWE1 model in a model viewing software, like with the JW and JP trike images above.
And these are all the dinos in JWE2, with more to come without a doubt. And while the 3 Dr. Wu hybrids aren't in the game both at launch or in the Deluxe pack, that's not to say yet they may not ever make it in later. Only time will tell if they ever will or not.

The new confirmed species for JWE2
Today, YouTube personalities are given a new opportunity to play the game for their channels with the blessing from Frontier to showcase them. These playthroughs also provide the opportunity to take a good first look of many species confirmed to be in the game, both from JWE1, like Nigersaurus...
I also want to bring up something interesting. A hunch I've had in recent months.
