I tried Mayo with a strong cheddar cheese sandwich for the first time only 2 months ago, and i was in flavour country.
I was never a huge fan of Mayo except with chicken and Egg... but recently ive started to develope a taste for it and ive experimented.
Cheese + Mayo = win.
