Is that just donating 500 tons of ore to her or does it actually track mined/processed ore? Would really love to unlock her but I can't really be bothered to mine, not really my cup of tea.

You have to mine them. but you don't have to hand them in. You can just mine randomly, eject what you refine, and it will count. Keep any Painite though 
You mean Selene Jean ? Just go out an mine 500t of ore of any kind. If it's low value you can even drop it after it's refined
So do you want her unlocked or not? Its fairly simple, you either mine 500 units, or you dont unlock her. Its not like there are no other engineers...

If you decide to unlock her despite not liking mining, it's a great opportunity to gather materials. You'll get plenty by mining.
Don't forget that you need to mine 500t of ore to gain access to Selene Jean but you also need to provide her with 10t of Painite to unlock her as well.
That being the case, if you're planning on a mining binge to gain access to her, you might as well collect some Painite at the same time so you can deliver it straight to her.
Also, on a related note, bear in mind that you often get pirate attacks when you arrive at a mining site - which means you probably want to mine the entire 10t of Painite in one go and deliver it to her or you'll want to deliver any Painite you do collect before having another bite at the mining.
Course, you can simply do the mining in a fighty ship and explode any pirates you meet.
Lastly, to "mine" 500t of ore, you need to collect it, refine it and have it in your cargo hold.
You can't just shoot a gazillion asteroids and hope that'll count, cos it won't.
That being the case, you're gonna need a ship with a refinery, collectors, prospectors etc.

Yes, as soon as you have mined the 500T, she wlil ask you for the painite, so go to a painite location and mine there. Anything that gets into your cargo hold counts towards the 500T, so you can eject anything in your cargo hold that isn't painite. If you check Selene in your panel, it will say how much of the 500T you have mined. As soon as you've done the 500T, you get the invite, so you can take the Painite directly to her. That saves an awful lot of messing about.
OP could always do Core Mining for VO's, so as well as unlocking Selene (and gaining access to Didi Vatermann, who's useful if you like your shields to be a bit more boosty) you'd also gain a frankly ridiculous amount of cash.
Don't. Blowing up asteroids is actually fun and we can't have that with the engineers.

500 sounds much but isn't really when mining. at least - it dint use to be.
Its not, got in the last 24 hours, adding about 2-3 hours gameplay, mined selectively 150-200 low temp diamonds and VO, in 2 short runs.
Its like people just wanted to have the goodies but put no effort into it, as already posited...
1) She is worth unlocking in my opinion... well worth it.
2) I helped a guy mine his 500T one night in a haz rez... that was a blast, lol... if u have ppl to defend u, it livens it up.
3) It can go really fast cause u can just eject as u go... it's only counting the total tons mined. However... it's maybe a good idea to do the final part in an area that has painite... since u will need to give her 10T of that... I liked the Nijakin system... Nijikan 4 was it?... My spelling is wrong, I'm sure... you'll have to find/plan where is good system for the painite... good luck!
