Either that or simply have your throttle at zero in the first place?

When docked at a station and you hit launch. During the flipping click your "zero throttle" button and your ship will first move when you move your throttle
No more speeding off uncontrolled
Where's the fun in all that?
Warthog don't have a detent at zero
It does as long as you don't use full range - I just use it as a 'normal' throttle, speedbrake switch to toggle reverse.
