Evasive piloting is a thing, if im in a system where I know people are gonna be causing problems I never go straight for my destination, i always curve around so i can do a 180 at the planet to prevent anyone from tethering me.
Also if I know they are about to get in range for a interdiction, I drop beforehand, and wait for them to follow me down with a charged fsd ready to go to supercruise.
Other than that if you know you are going to lose an interdiction, submit to it so you get the 10 second cooldown then target the first system in your nav panel and highwake if you are masslocked.
If not masslocked, heatsinks and flares are your friend for those 10 seconds to supercruise
