Touch pool for guests

Looks cool. Would be something for an marine dlc. I wonder if the animals are stressed though. We have these pools in the zoo in hamburg germany as well. However, we are not allowed to touch.
I was at an aquarium a few weeks back and they had a touch-pool with different shrimps.
There was always a employee to watch over the people, making sure they wash their hands and stick by the rules.
You just dip your hands near a shrimp and it would actually jump on your hand. The shrimps search for (dead? old?) skin particle and you can feel them scratching and moving around. It was pretty cool.
I don't think the shrimps were forced in any way, like I said, they were jumping/swiming towards the hands. They also had touch-free-areas and hiding spots.
Also, they had three different pools and one or two were always closed to give the animals time to rest.
But to be honest, I'm not so sure how you can determine if sea stars (or other rather unmoving animals) are stressed out.
