I've been running a trade route with metals from one station to another and than buying minerals and taking them back blah blah for days and days now, every time I buy the metal it says supply 992,751 like it never changes no matter how long i run the route! I mean right after I buy my 120 tons it changes but the moment i return from selling its back to 751 >>

If you are the only one taking that mineral and the outpost/station you are buying from is producing them, you may just be seeing what the hard cap of maximum capacity is at that station. By the time you return, they have "filled and restocked" their quota. I imagine it would go down over time if there were dozens or hundreds of players all taking the same commodity.

This seems about right, Ive been running a lucrative route in the fringes of Empire space where nobody else seems to be around at all for a few days now, and even though I am seeing it depleted as the day goes on, both the demand and supply seems to re-up between the time I go to sleep and the time I get back from work the next day. Its been fantastic.
That would make sense i suppose idk I have a feeling the background simulation is broken atm because it seems like some of the faction states, like expansion, aren't working properly either. Hopefully will get some more details on how everything works after the holidayss

to those systems that u guys are delivering, are u notiching any economic booms in the systems youre filling ( have u tried filling every demand type) and exhsuting that, barring that taking missions to supply items. Just wondering if the supply and demand being filled causes economic expansion in way or if its broken
