Hardware & Technical Triple Screen problem.

Did it render to all screens before and just stopped working or are you trying to figure out how to get the game to render on three screens?
If it's the latter case, did you look into Nvidia Surround or AMD Eyefinity? They enable you to combine multiple screens Into a single virtual one. You can the set the rendering resolution in Elite to that of all combined screens.
Alternatively: You might try to set Elite to window mode or borderless window rather than fullscreen. You can then use a tool like "windowed borderless gaming" to scale the window to fill your screen. Haven't done this for Elite, but it worked for a number of other games for me.

I have three monitors too, although by choice I only play ED on one. I use borderless windowed so I can use the mouse to take focus away from the game temporarily (for example to read the forum in chrome on another screen). If I play full screen at the monitor's native resolution I can still switch focus but the game will minimise to the taskbar.
If I play fullscreen at a non-native resolution the other monitors flicker a bit as the resolution changes then settle down, this may be where your black screens issue comes from.
To play ED across all three monitors ideally they all need to have the same native resolution, and the desktop settings need to be set (in the nvidia control panel if you have an nvidia card) to 'span'. In the nvidia control panel go to display, set up multiple displays, surround spanning options & tick the 'span displays with surround' option.
Once your desktop is set to effectively act as a single really wide monitor, go in-game & select the appropriate resolution in the display settings.

Not true. NVidia will set all 3 to the lowest common denominator. Not ideal but it looks ok.

Indeed you did. Obviously I missed that. Apologies good cmdr I am usually more observant than this after my first cup.
A funny thing: One friend of mine consistently omits the word "not" when writing instant messages. Needless to say that causes the odd bit of confusion.
