Two Big Issues

1. The game keeps crashing every time I open it up. I have to open it a second time for it to work. This happened for about a week with Planet Coaster when Thememakers Toolkit was introduced.

2. Creating terrain around water is not possible like it was back in Planet Coaster. Here I am trying to create mountains by a river, but I can't. I have to leave the water until the entire terrain is finished which is a hassle as it requires me to go back & forth to make things right.
 
For 2: it's the same if you want to form terrain near a path or barriers, as far as I can tell. I had massive issues with a 2cm gap at the bottom end of the barrier due to the path I set down first and it was impossible to fix.
In the end I had to delete the barrier several times, move it much further away from the path, raise the ground slightly and put it down again, before it worked. tried to gently raise the ground under the barrier, but nope. it wasn't playing. :(

Nope, worked fine with Planet Coaster. Different story with Planet Zoo.
 
You can right click to remove water with the water tool selected. So whilst technically yes you have to leave it till last, you can still check how it'll look before each adjustment.

@Amancham whilst path and terrain are an issue, there's an option in the settings that allows terrain to ignore barriers.

Well, yes. That's what I said. But there's a lot of back & forth going on there just to get the result you're after, where in Planet Coaster, it allowed you to create terrain around water and even in water for that matter, such as creating small islands.

Unfortunately Planet Zoo won't allow that.
 
the water/terrain interaction is different in this game because the water has volume, so it can be altered along with the terrain like in PC.

Well, yeah, that's the thing though. Same as Planco. But this issue doesn't occur in Planco as it actually allows you to edit terrain around water. It won't even allow me to create terrain high above the water to create bridges, caves and such. All terrain must be created & must be efficient before placing water. Which makes things twice as hard.
