I noticed there's sometimes quests or missions to increase education rating for a certain species of animal. Problem is how do I know what's the % of the education rating for any particular animal? I've been digging through the management tools and can't find any. The education rating only specifies general overall education but what about specific animals? How do we know if we're putting less signage for that particular animals or not.

I don't know how to see specific animal ratings in the management tools (would love to know this as well or see it implemented if it's not currently a feature!), but if you need to know for a quest/mission, the quest itself should have a little % number in the bottom right (I think; it might be bottom left) that tells you for the particular quest animal.
I think this is related to how many guests actually read the information boards. I usually don’t pay attention to these tasks and the education related tasks often get completed without you doing anything. Just having more guests visit your zoo, passing by the animal in question and reading the board will apparently do the trick.
Apart from that, you can just delete this kind of tasks if it takes too long.
