You can. It just takes time and is super annoying - you just have to keep buying cheetahs until one appears on the market. Or you can download the mod that makes them more frequent.

What Sandbox Mode should have though is a full-on animal designer that simply lets us choose everything from genes to coat variations to origin instead of simulating a fake market. It might not be realistic, but hey, it's Sandbox Mode.

I wish we had just an animal creator for sandbox, where you can get the exact animal you want. Not only color variation, but also size
