Unfortunately the videos are either misleading or indicative of earlier builds. The graphics have been downscaled as builds have progressed. As to the reasons why, well, there is as always lots of forum speculation with very little feedback from Frontier Developments.

Good monitor and setting to ULTRA is nothing without a good GPU, I noticed you didn't mention any of that. For comparison here is what the game looks for me and a quad i7 with GTX980 Titan

i have an i75820k 3,30ghz, 16gb ddr4 3200, geforce gtx 970 4gb oc.... i think is more than i need for ed

I think that is quite misleading and unfair.
My visuals are really great.
I do agree that some things could be improved, but the game certainly does not look like crap.
These are some very recent screenies.
I downsized them for the upload.
I do not use graphics mods.

That should be plenty. You'll to post some screen shots as examples,a s I have seen perfectly fine graphics on much lesser machines. I will add to make sure your GPU drivers are up to date
I find that it all depends on the lighting from the star. I have a r9 390 and get 60fps on planet surfaces on ultra. Some systems are beautiful others are not so. I've only just left the bubble after 9 months of play. I've spent the last 30 odd hours of game time marvelling at the lighting and textures on the planets. Those textures with lighting within a nebulae are a rare treat.
Plus a lot of streamers used mods to enhance the visuals.
Have you tried using the game optimization in geforce experience?

It also depends on which Youtubers video you look, some like to use graphic Mods.

Your screenies look good IMHO.
I'd also hazard a guess that the Youtubers you compare your GFX with do use some mods to enhance the visuals.

with v-sync off the fps go crazy, ill try it
