50 species and so many animals until the console crashes on last gen consoles.
Unlimited at the rest.
But it depends strongly on your hardware from when it starts to cause problems^^

On PC, PlayStation 5 and Xbox Series X|S you can have as many dinosaurs and dinosaur species as you'd like in Sandbox Mode.
On PlayStation 4 and Xbox One, you can't have more than 50 species of dinosaurs, but you can have as many dinosaurs of those species as you'd like. If you have 20 Compsognathus, 5 Velociraptors and 4 Triceratops, they only count as 3 species.
Jens said unlimited species for PC which I'm using that. The reason it is unlimited for PC is because we can add more RAM sticks. With consoles, you can't. So it is limited in some way for consoles, I suppose. As for unlimited dinosaurs, but limited species for consoles, I wait for that answer like yours.
