What do I need to do?

I just came back from my trip to colonial then Sag A* then home. And I got to 64% Pioneer. I was wondering what would I need to do to get that last 36%?

You can go out again and return when you've scanned enough systems. Or you could run sight-seeing passenger missions if you don't fancy going out aimlessly. Finally, you could simply go and scan ELWs and WWs as described in this guide: https://forums.frontier.co.uk/showthread.php/353418-Exploration-Zero-to-Hero-in-under-5-days

Literally! No, I sympathise with you, I was half way through ranger, made my way to Colonia (from the Bubble) and made 11% Pioneer. So off to Beagle am I.
 
About half the stuff you have scanned since your last explorer rank?

Don't grind it, just do some other stuff, but scan everything new you see on the way. Then have another look in about two weeks.

Pretty much what Arry says...

I reckon you're about 50 million credits of exploration data away. I went from 40% Pioneer to Elite and it was roughly 85 Million credits. I don't know if there are criteria other than just pure credits (I reckon I got Elite with about 215 million), but I had a lot of first discovered in the data I turned in.

If your only goal is to reach elite, then I suggest you to stay close to the bubble and possibly do some passenger missions.
On the other hand, if you really want to do some real exploration then just choose a destination and go, how far you'll need to go will only depend on the route you'll plot and how much systems/bodies you'll scan.
I can recommend you to use Captain's Log application to help you to figure out how much credits you'll make (roughly) during your trip.

Nah, Beagle Point is a travel challenge, not an exploration one.
For exploration, it would be something more akin to finding an Earth-like around a rare star type (so outside of A/F/G/K/M/NS), or a POI for the GMP / tourism beacons, and so on. Something undiscovered.
