So been flying around since beta, and was never actually clear on this, what if anything happens if I suddenly, in the middle of SCing to station or in front of it, or from where ever not docked, I escape to menu and save and exit, will my ship survive my sudden exit, or will I end up in the last station I was in?

depending on where you save you'll end up roughly where you left it, if you save out during SC you will reload in normal space towards the point you jumped in at, if you save in front of a station you'll rejoin at a distance of 8-10 km from the station as if you'd just dropped out of SC.
the only exception to this is if you try saving when you are in combat, you'll have to wait 15 seconds before it logs you out, leaving you vulnerable to attack.

I am pretty sure it doesn't let you save in combat - gives some sort of "get out of danger first" message (been a while since I tried that, don't remember exact wording).
So what would happen if someone just pulled the plug I wonder ?
