What is an Escape Victor?

Don't you mean escape vector? It's the direction you got to follow to escape a gravity well, for instance when you get too close to planets.
 
Escape Vector. It's showing you the direction you need to go to escape the gravity of a nearby body (sun/planet).
 
The escape vector is the vector you need to align your ship with in order to overcome an objects gravity.

An escape vector is the trajectory that will get you out of the gravity well if you attain sufficient speed.
 
If you get too close to a large planetary body - a sun for example - then you get thrown out of superscuise because you get caught in the gravity well. There is a subtle proximity line around all such bodies and if you get too close then you will get a proximity warning and cockpit lights will start to flash red.
