There are over 70 animals in the game, I am sure there are lists on the interweb somewhere.
Protestors make guests unhappy and lower your park ratings and are a sign something is wrong with one of your animals.
And no, animals do not attack guests. But the guests do run away from them screaming in terror, they are just being dramatic. (Animals will attack other animals tho)
