what's a murder hobo?

Player attacking others for no other reasons than "for the lulz reazonz". Murder hobo does not want your cargo, and at best hobo's explanation is some vague "bgs" explanation. Usually interchangable for griefer or troll.
Someone who plays ED in a way that features them attacking other player ships.
They are Pirates who like the sport of player prey, they are Man hunters.
They don't necessarily take money or material reward away from the encounter because Elite Dangerous dosent really encourage or reward the effort to do so.
So the kill is typically its own reward and players who find themselves in the crosshair usually need to adapt, play smart or hide in Solo or PG.

The most fun I've had ever in this game is player piracy for the player interactions. I can't speak for everyone but I consider it a failed attempt if I have destroyed any ship I've interdicted. Please don't lump legit pirates in with murder hobo's.

gankers are murder-hobos that murder in a group. So all gankers are murder-hobos, but not all murder-hobos are gankers.
I think a distinction should be made between people who PvP for valid RP (e.g. piracy) or gameplay (e.g. BGS) reasons versus murder hobos.
Murder hobos don't care about cargo or factions or anything else other than making someone else eat a rebuy. They are in it for the feeling of having caused someone else pain, nothing more.

Everyone who posted in the PvP subforums, has posted in favor of open only powerplay, have shot at another player or hell, even looked wrong at another player, is a murderhobo.
