I've been around the game for some time now, and I looked up some stuff regarding how to tell when someone is an NPC or Human. And I realize that I haven't seen a single person in open play. I'm getting bummed out because I can't find any people to interact with, the most I've done is ram an npc through the docking gate.

Yeah, go to lave and pick up some rares. I'm sure someone will be a long in a minute to take them off you...
If you still don't see players check your firewall settings and open the required ports maybe?

Populated space is a 500+ Ly radius around Sol.

Do you get where I am going?
Get to Lave for example, plenty of people in that area.
Or so I hear, never been.
I usually only meet people on my trade routes, since then I visit the major trade stations.
But when I'm just roaming and bounty hunting, I can go for days without a triangle.

Join an alliance and/or add people to your friends list. If they're in the same system as you, you'll be preferentially added to their instances.
If you're in a player alliance, you'll be knocking around the same systems in order to achieve your shared goals.
Many player interactions are brief affairs - you spot a T7 on your scanner and say Hi as you pass through a system and the like. Either that or you're too busy boosting away from the pirate trying to take your cargo on your rares run to type any messages to them.
