Where are the resource extraction points?

I have been flying between systems for a total of 7 game hours (not an exaggeration unfortunately) with my new Viper trying to find a resource extraction point. I'm going to systems that say extraction only to find in all cases there is no extraction going on at all anywhere in the system. In some cases there's not even planets at these systems so where is this info coming from?

Also has fuel scooping been made extremely hard recently? As every time I try to do it now the ship overheats instantly and drops out of cruise or is this something the Viper just cannot do very well? (I had the truck before).
 
RES sits show up on planets with rings that are not of the icy type. If you don't see any RES sites, it could be because you are too far away from the planet, as they only show when you get close enough, or that you don't have exploration data for them.

Can you give us a system as an example

Use your galaxy map. Check the system maps for all the systems around you. Look for planets with rings like Saturn. Select them and check to see if the rings have metal in them. If they do, there will be a RES. Some have low and some high intensity. Some have hazardous ones. Some have all three.

Regarding missing planets:
Sounds like you'll need to equip a discovery scanner or buy exploration data which you can do from surrounding systems within a 20ly radius.
The former can be done by outfitting but it may mess with your loadout so not ideal.
If you use the galaxy map, then view, then realistic, you can mouse over the system and there's an circular icon (2nd from the right if 5 icons) which will let you buy the system map data with all the planets showing.
You can then either use your system map as they're at (non-icy) ringed systems (so just fly to one) or from the left screen under navigation because if they're close enough they'll show up.

Can't remember about the Viper regards heat but I do remember having issues with it but it was a good while ago. If you have a class 2 or less fuel scoop you will overheat because you have to say in close proximity to the sun for a prolonged period of time. When it starts getting to hot just back off a bit and glide back in when your heat drops.

Thanks for replies I'll keep this info for later as currently I have had to wipe my commander as I ended up up the creek without a paddle.

Now I've got the joy of starting at a random system (which is the same sodding "random system" I always start at LOL) with a sidewinder and 2 tons of cargo space and no courier missions I can qualify for! The joys of a game with a vertical 5 mile cliff to climb at the start.

If you mean LHS 3447, then jump over to Kremainn. That should have a few RES sites. Leech off the system security and you'll be back in the Viper in no time.
 
An "Extraction" system does not necessarily mean that there are RES sites in the system, or that there are supposed to be. It's simply the economy type of the system. An "Extraction" economy will have plenty of ore, and refined precious metals, for sale in its starports. It won't have manufactured goods or foodstuffs for sale.

The vast majority of mining in any given system usually comes from (invisible) mining facilities on the surface of the planets.
