On an accessible station I can now pay my bounty, but I am still wanted...

But where the hell do I find a counter that tells me what crime level I'm on (if one)?
So that I know when I can finally clean my ship at "Interstellar whatever"...

My experience since 3.04 is that all bounties can be paid off immediately at any Interstellar Factors Contact. I do a lot of Planetary Scan Jobs and usually end up Wanted in multiple systems at once as a result, so I plan the missions sequence so at the end I can visit the system with the IFC office and pay my fines/bounties before collecting on the missions. The Galaxy Map now has a filter to help you find the IFC systems, but be aware that it is not always accurate -- one system I used once did not have the IFC office a few days later.

Incidentally, there is a means of scanning the Data Point at an Outpost with the two Defense Turrets without having to destroy them or breaching the Trespass Perimeter. You still get a bounty and become Wanted for reading a Private Beacon, but no other penalties. See this post, info in the Spoiler:

I'm pretty sure it's on the "system" (right hand) screen on the statistics page with all the other crime statistics.
