Can I find the image files for these items? I want to create my own ed boards but use (some) of the images. Like the map from the zoopedia.

I would take a screenshot and then crop the image.

Pretty much all of the game files are inside OVL files, which are basically like a zip file in that a single file contains a bunch of other files. All of the games' data and images are stored in them.
If you are willing to track down the tools which modders use to make custom animals, among those would be an OVL extracter of some type, which would allow you to extract those images.
