Which shops are the most popular?

when I Played that scenario, I had 2 drinks stalls, 2 food stalls, a balloon stall, and then I built a coffee shop which made tons of money. You can also charge $1 for the bathroom. Its a rather easy scenario all you need to do is build a bunch of rides to increase your guest count and the objective will basically take care of itself.
 
Balloons are pretty popular, until everyone got theirs. ;) So it is better to not put those gift shops until you got a certain number of guests and/or steadily increasing guests.
 
Which shop to choose very much depends on the kind of set up you have. If you only provide one drink shop and one food shop they will probably be popular no matter what you choose.

If you provide choice then peeps definitely have preferences. Chief Beef and Hotdog Squad are always popular as is Cosmic Cow and Gulpee. Coffee and Pizza tend to be less popular.

Layout is also key to good profits. You rarely get good results if you cluster shops of the same category together. You may think in real life that it's a good idea to place a fries shop next to the burger shop, or place a donut shop next door so the peeps can get dessert after their meal but the peeps don't think like this. You may also think it's a good idea to create food courts but again peeps don't work like that.

They get thirsty more quickly and more often than they get hungry so I find 2 drink shops to every 1 food shop works best. Keep an eye on demand. If there's lots of thirsty peeps in the park then you're not adequately meeting the demand missing out on potential sales and therefore profit. They will tend to only try to satisfy one need at a time then head off to the next attraction so scattering shops around is far better than centralised food courts.

Shop profit is highly dependent on footfall so only build them in high traffic areas. If there are queues and people walking away unhappy at the queue then upgrade the vendor so they can serve faster and therefore make more profit.

Like Helena said gift shops tend not to sell well until your park is well established and people are having fun so build them towards the end and you should get a nice rush of sales to boost you towards the profit target. It's actually quite easy to make $5k or more profit per month from shops alone in a busy park if you get it right.
