Will I don't really know, as I only play on pc. However having read about it here and there, the game seems to be identical on the two platforms. There might be some graphics advantages on pc, but that doesn't affect the experience once you are hooked... The major advantage of the pc might be the selection of controllers, I'm not sure if you can get a hotas and/or pedals hooked up to the xbo.
Also, unfortunately there's no cross platform play, and the pc population seems to be a bit larger.

On the PC you can connect a joystick and head tracking, you can manually edit some config files to set the graphics beyond built in Ultra settings (for example texture resolution or number of small rocks on the planets) or to change your HUD colour.
Apart from that it's all the same.
No Kinnect support for XB afaik.
